Black Bean Salsa


I had a fun little trip to the farmers market this weekend and got a great deal on tomatoes. I knew exactly what to do with them. My sister Jenilyn has the best salsa recipe and with tomato season coming I just have to share! So refreshing, healthy, and delicious!


















RECIPE 

2 cans black beans 
1 can shoe peg corn 
1/2 cup red or sweet onion 
5 tomatoes chopped (I added a little more) 
1/4 cup fresh cilantro chopped 
2-4T olive oil
6T lime juice (about 2 limes) 
1/2 t. cumin, cayenne pepper, salt, garlic salt, pepper. 
Mix together and serve with chips (We love using the longboard chips from trader joe's)
